Every year we used to visit native for Diwali but this year thought to stay back due to various reasons. But all prepped to celebrate Diwali. Indian festivals are incomplete without sweets. 7 cup Burfi is one of the easiest sweets which can be done quickly and with minimal ingredients. This will be in my to-do list of Diwali Menu :). Though Diwali is a few days away, made a small batch of burfi, and trust me it just vanished in a day. Don't forget to try and make ur Diwali special. Let's do it :)

7 cup burfi is a classic south Indian Dessert made with 7 measures of ingredients.
Yields: 10-12 Burfis

Ingredients:
[7 Cup / Measures= 1 Measure Besan, 1 Measure Coconut, 1 Measure Ghee, 1 Measure Milk, and 3 Measure Sugar]

I have used 1/4 Cup as 1 Measure
1/4 Cup Besan / Gram Flour
1/4 Cup Fresh Coconut Grated
1/4 Cup Ghee / Clarified Butter
1/4 Cup Milk
3/4 Cup Sugar [Check Notes ]
1/8 tsp Cardamom Powder [Optional]

Directions:
1. Grease the tray/pan with ghee and keep aside. Keep all the ingredients ready.
2. In a heavy-bottomed Pan / Kadai, roast the Besan on low flame till you get a nice aroma. Take care not to brown the flour.
3. Add the Grated Coconut and Roast for 3-4 Seconds.
4. Now add all other ingredients [Ghee, Milk, Sugar, Cardamom Powder] and combine very well and keep stirring on medium flame.
5. Keep stirring so that it will not burn. It will slowly start to thicken.
6. Keep stirring till it thickens and leaves the sides of the pan and comes together as a one mass/ball. At this point, Ghee will be released from the sides of Pan.
7. Transfer to the greased pan and smoothen the top. Allow it to cool down.
8. Once cools down cut into pieces and store it in an airtight container.

Notes:
1. Sugar will be 3 times the measure. But 3 Times will be too sweet for me. I have used 2.5 times the measure. 
2. Don't Take out from heat very early as it will not set.
3. Don't Keep for a long time as well, as it will become hard once it cools.
