As we are in-home 24/7, we easily get bored and we need some snacks to munch on. The weather In Bangalore is rainy and cold and it reminded me of Chikkis made by mom during winter. So thought to make these quickly for our munching snacks. I made a few and it vanished in no time. Should I be happy or sad :)??. I thought to keep for a while but !!! ...
It is very easy to make and very quick, the only trick is to get jaggery syrup right. It's not difficult to get that trick at all. Lets quickly get the trick ;)...

Chikki is an Indian sweet made with mainly two ingredients, peanuts, and jaggery.
Yields: 20 small-medium squares

Ingredients:
1 Cup Peanuts (165 gm )
3/4 Cup Jaggery (100gm )
1  Tbsp Water
Oil or Ghee for greasing

Directions:
1. In a thick bottomed pan, dry roast the peanuts on low flame, till it gets brown spots and becomes crunchy. Keep stirring so that it gets heated from all sides.
2. Once cooled, separate the skin by crushing in hands to make it halves and keep aside.
3. Grease the tray/plate with the ghee and keep ready.
4. In a thick bottomed pan, add jaggery and water and heat it to melt on low flame. Keep Stirring so that jaggery will not be burnt.
5. After melting, jaggery starts bubbling and after a few minutes becomes thick and starts coming together.
6. Drop a jaggery syrup in a bowl containing cold water. It will settle at the bottom and becomes firm/ brittle and breaks easily. It means jaggery syrup is ready.
7. Now quickly add the peanuts and stir well so that everything gets coated well. Switch off.
8. Immediately transfer this mixture on the greased plate and roll it evenly to flatten it with the rolling pin or pat with the backside of any bowl/cup.
9. Once flattened, cut it into squares when it is warm.
10. Enjoy when it cools down. Store it in an airtight container.
