Chocolate Genoise Recipe | How to Make Simple Chocolate Genoise

Chocolate Genoise is base for many cakes. This is similar to sponge cake. I have adapted the recipe from Joy Of Baking

Main difference between Genoise and sponge is Genoise is less crumby,Hence easy to ice the cake. And while making genoise we will not separate the eggs while beating.and we add butter for genoise.
Both Sponge and genoise are light and easily absorbs the syrup and becomes moist.

I like to use Genoise, when used for icing as it is less crumby. But when I want to go for fat less cake or plain cake to eat I prefer sponge. You can click here to see how I used sponge cake while making black forest cake.

This is Basic Chocolate Genoise which is used to make many special Cakes.

Yields: 9 inch Round Cake

Ingredients:

1/2 Cup All Purpose Flour
1/3 Cup Cocoa Powder
4 Eggs
2/3 Cup Granulated Sugar
3 Tbsp Hot Melted Butter
1 tsp Vanilla Extract


Directions:
1.In a bowl sift the Flour,Cocoa powder. Keep aside.
2.In a heatproof bowl,Whisk the eggs with sugar and then place it on saucepan of simmering water.
3.Keep whisking for about 5 minutes until it becomes luke warm.
4.Remove from heat and Beat egg sugar mixture using hand mixer till it becomes thick.The Batter will fall back as ribbon like pattern and dissolves in bowl.
5.Finally add Vanilla essence to it and beat for 5 seconds till it gets mixed.
6.Preheat the oven at 180 degree. I heat the microwave with convection mode for 8 minutes at 180 degree.
7.Grease the cake pan with oil and sprinkle flour or line with parchment paper.
8.Now Fold in the 1/3 rd of Flour mixture(step 1) at a time to wet mixture gently using spatula/whisk. Don't over mix. Mix once or twice.
9.Once Batter is ready, Take little batter to bowl of melted butter. Mix it well with butter and Fold in back to Batter.
10Pour the batter into greased cake pan and gently tap it and bake in preheated oven at 180 degree for 25 minutes.(convection mode)
11.Keep checking after 25 minutes. Bake till toothpick inserted at centre of cake comes clean.
12.Cake is ready.Let it cool down.
