Preparation of Brinjal Chutney is very simple. All the ingredinets used are raw except Brinjal.Brinjal is roasted on fire and then mashed and mixed with other ingredients.Smoky flavour of Aubergine gives amazing taste to the dish. You can have this chutney with chapati or simple dal rice / rasam rice.

This is very Simple, Easy and Quick smoky flavoured chutney made from fire roasted Aubergine.

Serves: 3-4

Ingredients:
1 Big Round Brinjal / Aubergine
1 Medium Onion finely chopped
1 Green Chilly finely chopped
2.5 Tbsp Coriander Leaves chopped
1/4 Cup Grated Coconut
Salt to taste


Directions:
1.Rince Brinjal in water and wipe and pierce few times with fork and Place it on direct flame to cook.
2.Let the flame be in medium and Rotate in between to roast evenly.
3.Once Brinjal gets cooked remove from fire.If you insert the knife to check, It will come out easily when cooked.
4.Allow it to cool down. Once cooled remove the skin. It will come out easily.
5.Mash Brinjal with fork or fingers.
6.Add all other ingredients to mashed Brinjal and mix well.
7.Serve with dal/rasm rice and enjoy.
