As we are staying 24/ 7 inside the home, the demand for snacks is increasing. I usually avoid making sweets because I end up eating everything. I love sweets. But now due to demand, I thought to make some easy snacks and desserts which I can store easily. Ladoos are one of the easy options and can be prepared quickly.

Rava laddu is Indian sweet prepared with very few ingredients like Rava, Sugar, and Ghee.
Serves: 10 medium laddus

Ingredients:
1 Cup Rava (Semolina / Sooji)
1/4 Cup Ghee (clarified butter)
1/2 Cup Sugar
1/4 Cup Water
10 Cashew nuts chopped, Raisins 
1/2 tsp Cardamom powder(optional)

Directions:
1.Heat the ghee in a wide thick bottomed pan.
2.Fry the cashew nuts and raisins till raisins pluff up and cashew turns golden brown. Keep aside.
3.Now Roast the Rava in the same ghee, till it becomes fragrant and slightly change colour. Take care not to burn. Keep aside.
4.In the same pan, add sugar and water in medium flame..when the sugar melts and water starts boiling, reduce the flame to low and keep checking for one string consistency. The syrup should not be watery and it should be slightly thick so that when you drop from a spoon , it should fall slowly. Don't make it too thick.
5.Switch off and add the roasted rava (from step 3) and Cardomom powder and mix well and keep it aside for 20-30 min till it is warm enough to make laddus.
6. Grease your hands with ghee and shape rava mixture firmly with palm to make round balls and add cashew nuts and raisins and make laddus.
7.Store it in an airtight container for about 2 weeks and enjoy eating.
