I am big fan of Mangoes. I ate a lot of mangoes this season. I made lot of desserts,drinks with mangoes which I shared already.Today made this mango cake which is super moist and yummy with mango flavour.

This time I preferred to make eggless cake so that I can make it quickly without much work. I wanted to make with ingredients which are easily available in my pantry.I Searched many recipes on google, finally came up with this which requires No butter, No eggs, No condensed milk.It came out well. Perfect to have this plain Cake with your tea. I made mango glaze on top.You can even eat plain or drizzle with mango syrup.

Soft,Moist,delicious Eggless Mango Cake made with easily available ingredients.

Yileds: 8 inch Round Cake

Ingredients:

Mango Cake:
1.5 Cup All Purpose Flour
1.5 tsp Baking Powder
1/2 tsp Baking Soda
1 Cup Mango Pulp
1/3 Cup Vegetable Oil
3/4 Cup Granulated Sugar
1/4 Cup Thick Yogurt/Curd(not sour)
1/2 tsp Vanilla Essence

Mango Glaze:
1/2 Cup Mango Pulp
2 tsp Gelatin (soaked in 2 Tbsp water)

Directions:
1.Sieve the All Purpose Flour 2-3 times and keep aside.
2.In another mixing bowl Add Sugar and Yogurt and whisk well.
3.Add Baking Soda and Baking Powder to it.Mix well and keep aside for 5 minutes until you see bubbles .
4.Now add Oil,Mango Pulp and Vanilla Essence to this curd mixture and mix gently until the ingredients are combined.
5.Fold in Flour little by little at a time to this wet mixture.Meanwhile Preheat the microwave at convection mode at 180 degree for 8 minutes.
6.Once the flour is folded in and batter is ready , transfer the batter to greased and lined cake Pan.
7.Bake the cake in preheated oven for 30-35 minutes till the toothpick inserted in the middle comes out clean.
8.Once cake pan is cooled a bit and able to handle sides of pan, demould the cake and allow it to cool down on cooling rack.
9.Enjoy plain cake or with your choice of icing.

1.Prepare the glaze only after the cake is cooled.
2.Sprinkle the Gelatin in Water and keep for 5 Minutes. Then Microwave for 30 seconds.
It will be Clear solution.[See Notes]
3.In a Pan, Heat the mango pulp until warm.
4.Once gelatin mixture cools down add it to Mango Pulp.
5.Once cooled,pour the glaze over the refrigerated cake and Refrigerate this to set at least 3 hours.
6.Remove the sides of pan gently and enjoy the slice :)

Note:
1.Springform Pan makes easy to pour Glaze only on top.
2.To dissolve the gelatin you can use double boiler method too.
In a separate Vessel boil the water. Hold the bowl of soaked gelatin above this boiling water and keep stirring.
Gelatin will become clear solution.
3.While slicing the cake dip the knife in warm water. Slices will be cleaner.
