Brinjal is also called as EggPlant and Aubergine.

I was not a fan of brinjal during childhood.In fact, I never liked eating most of the veggies :).I always loved to have fish and other sea foods.But mom somehow used to make us eat some veggies :).But you know how we can make all drama with mom :)..

I Loved brinjal when I ate stuffed brinjal for the first time, which is called 'Ennegayi' in Kannada made by mother in law. I really love that dish with rotis.
My mother in law is a great cook.Lot to learn from her. I will be posting 'Ennegayi' Recipe soon.
That's how my trials on brinjal started :). This recipe needs very common ingredients and very easy and quick to make. This is one more yummy brinjal recipe.

Easy and Quick Brinjal Curry
Serves: 3-4

Ingredients:
8-10 Small Brinjal or 4-5 Medium Brinjal
1/2 tsp Mustard Seeds
1/2 tsp Cumin Seeds
1 Sprig Curry leaves
1 Medium Onion
1/4 tsp Turmeric Powder
1 Tbsp Oil
Salt to taste

Roast and Powder:
1.5 Tbsp Chana Dal
1 Tbsp Corainder Seeds
2 tsp Urad Dal
4-5 Red Chilly
2 Tbsp Coconut Grated

Directions:
1.Cut the Brinjal length wise into quarters and Chop the onion lengthwise.
2.Roast the coconut for 15 seconds.When aroma comes,transfer it to blender.
3.Now Roast all other ingredients under 'Roast and Powder' till aroma comes.
4.Now make a coarse powder(not very fine) of it along with coconut and keep aside.

5.Heat the oil in the heavy bottom pan.When oil is hot add Mustard Seeds,Cumin Seeds,Curry leaves.
6.When Mustard seeds crackle add onion and saute till it becomes slight brown.
7.Now add brinjal,turmeric and salt.Cover and cook till almost done.I sprinkled very little water so that it will not get burnt.
You can use more oil and skip water .
8.At the end add powdered spices(from step 4).Mix well and cook till brinjal is 100% cooked.
9.Serve hot with rice,dal and enjoy.
