Chicken Frankie Recipe | How To Make Chicken Kathi Roll

Frankie roll is nothing but roti filled with chicken egg mixture.
This is very famous Indian street food. First time I had this roll with my sister near her college.Until then I never knew this is called Frankie or Kathi roll.This is loved by students.Even I fell for it :).We can find many food joints having these rolls. I am sure it is loved by everyone.
This is very delicious and very easy and quick to make .

You can quickly make this whenever you have left out roti/chapati or you can roll out fresh rotis.
Usually this is made using maida/ All Purpose Flour. But I used only wheat flour.you can even use half of wheat flour and half of all purpose flour.
You can even make this with any other meat.Vegetarians can make this with paneer or mushroom.
Everyone will love it.

Chicken Frankie(Chicken Kathi Roll)
Yields: 4 rolls

Ingredients:
Filling:
400 gms Bonelss Chicken
1 medium Onion
1 Tomato
1 tsp Ginger Paste
1 tsp Garlic Paste
1/4 tsp Turmeric Powder
1 tsp Red Chilly Powder
1/4 tsp Garam Masala
1 tsp Coriander Powder
1/2 tsp Cumin Powder
1 tsp Oil

Roti:
1 Cup Wheat Flour or Maida/All Purpose Flour
Salt to taste
1/2 tsp Oil
2 Eggs

Garnish:
1 Onion
2 Tbsp Coriander finely chopped
1 tbsp Lemon Juice
4 tsp Green chutney(optional)

Directions:
Filling:
1.Cut the chicken into small bite sized pieces.
1.Heat the Oil in wide pan. When Oil is hot add onions and saute till it turns brown.
2.Add Ginger paste,garlic paste and saute for a minute.
3.Add the tomatoes and cook till it becomes mushy and comes together. It will start leaving oil.You can add very little water if tomatoes are not juicy.
4.Add all the spices (Turmeric Powder, Red Chili Powder,Garam Masala,Coriander Powder and Cumin Powder) and mix well.
5.Now add the chicken and salt and mix well and cook covered till the chicken is done.Do not add any water.
6.Take the lid off the pan and dry up all liquid.
7.Switch off and keep aside.

Roti:
1.While the chicken is getting cooked lets make the soft dough using flour,salt and water.Apply the oil to dough and keep aside for sometime.
2.Knead the dough once for 30 seconds and Divide the dough into 4 equal parts.Dust the surface with flour and Roll each into thin large round roti.
3.Heat the tawa.Put the roti on hot tawa. Once bubbles start coming flip to other side.
4.Whisk the 2 eggs and Apply 1/4 part of it on top of the roti and spread it using fork.
5.Now flip the roti so tht egg part comes down and gets cooked on tawa.
6.Drizzle some oil on the sides of roti.
7.After 30 seconds remove from tawa and keep on serving plate.Similarly Make all rotis.

Assembling:
1.Add in onion,Finely chooped coriander,Lemon juice to chicken mixture and mix well.
2.Divide the mixture into as many rotis you have (here 4 parts)
3.Now on the serving plate put the roti so that egg side is up and spread the 1 part of chicken mixture to one side as shown in pic.
4.Add in 1 tsp green chutney and roll it tight to make wrap.
5.Serve hot.

Notes:
1. You can make rotis and chicken mixture ready in advance. Just before serving, warm up chicken mixture and rotis and prepare the roll.
