Gulab Jamun is deep fried dumplings(traditionally made of khoya ) soaked in sugar syrup.
This is one of the popular Indian dessert.It is made in almost all special occasions like weddings, festivals.
This recipe is Easy way to make jamun using milk powder. This makes very soft and delicious jamun.

I always used to do jamun with ready packets from shop. But from the time I have learnt making this recipe , I never bought from shop.
This is more tasty and delicious than store bought. I can't stop eating one or two ;).Count goes on...

Gulab Jamun - deep fried dumplings made with milk powder soaked in sugar syrup.
Yields: 15-20 Jamuns

Ingredients:
Jamun:
1 Cup Milk Powder
1/4 Cup All Purpose Flour/Maida
3-4 Tbsp Yoghurt/Thick Curd
1/4 tsp Baking Soda
1/2 tsp Oil

Sugar Syrup:
1.5 Cup Sugar
2 Cup Water
4-5 Green Cardamom
Pista and almond flakes (for garnish)

Directions:
1.Heat sugar and water in pan on high flame.Once the sugar dissolves and syrup comes to boil, lower the flame .
2.Add cardamom powder and mix and switch off after 5 minutes.(No need of one thread consistency/syrup need not be very thick)

3.Mix all the ingredients under jamun except yoghurt .
4.Add yoghurt 1 Tbsp at a time to make smooth dough.It will be sticky and smooth.Add more yoghurt if required.
Do not over knead dough.
5.Grease the hands with little oil and Divide the dough into small balls.Balls should not have cracks. It should be smooth.
Size will almost double after frying and soaking in syrup.
6.Deep fry in medium flame so that it gets cooked evenly.Once you put the balls in oil, it will rise to top slowly.
Fry till it gets golden browned equally .
Oil should be hot enough but not too hot.If its too hot, balls will get burnt as soon as you put it in the oil.
If oil is not hot enough, it will take time to cook and balls will become hard.
7.Drain jamun's on kitchen napkin and immediately add to warm syrup.
8.Keep Jamun's for at least 3-4 hours in syrup.
9.Garnish with Pistas and almonds.
Enjoy Chilled Jamuns.
