I love to eat vegetables with spiced flavor. so here comes kadai vegetables where vegetables are cooked with spices.

1 cup French Beans cut into ¼ inch pieces
1 cup Carrots cut into ¼ inch cubes
1 cup Cauliflower florets
1/4 cup Green peas
1 Green Capsicum cut into julienes/thin stripes
Roast and powder:
1.5 Tbsp Coriander seeds
1 inch stick Cinnamon
1.5 tsp Cumin seeds
1.5 tsp Fennel seeds
6 Dried Red Chillies
1 tsp Kasoori methi
10 cloves Garlic
3 Green Chillies
1 inch Ginger
1 Tbsp Oil
2 medium Onions
1/2 tsp Turmeric powder
1 Tbsp Coriander powder
1 tsp Red Chilli powder
2 Tomatoes chopped
1 tsp Garam Masala Powder(optional)
Salt to taste
Coriander leaves to garnish
Ginger julienes(thin stripes) to garnish
1.Chop all vegetables and boil the vegetables(except capsicum).Strain the water and keep aside. You can add vegetables of your choice.
2.Meantime Heat a pan. Add ingredients under 'roast and powder' one by one and dry roast on low flame till the aroma arises. Take care not to burn.
3.Once it cools, powder it and keep aside.
4.Make paste of ingredients under 'Paste'. You can directly use ginger garlic paste too.
5.Heat oil in kadai. add onions till it turns brown.Add paste made in step 4 and saute for a minute.
6.Add the boiled vegetables, turmeric powder,coriander and chilli powder and stir.
7.Now add kadai masala got in step 3and sauté for 30 seconds.
8.Add tomatoes,salt and water if required and cook covered till the water dries up.
9.Now add the capsicum and cook for 5 minutes.Add garam masala powder at the end and stir for a minute and switch off.
10.Garnish with coriander leaves and ginger stripes.
