Recipe Source: manjulaskitchen

Makes: 10 - 12 Cookies
Ingredients:
1/2 cup Wheat Flour
1/4 cup Sugar
1/4 cup Unsweetened Desiccated/Fresh Coconut
1/4 cup Unsalted Butter
A pinch of Salt
1/2 tsp Baking Powder
1/2 tsp Vanilla Essence
1 tbsp Milk or as needed
1.5 tbsp Unsweetened Desiccated/Fresh Coconut for garnish

Method:
1.Grind the sugar into a fine powder and keep aside.
2.Add the butter and powdered sugar in mixing bowl and mix it until light.
3.Add the vanilla and salt and mix.
4.Now add the wheat flour, Baking Powder and coconut to it and mix everything.
5.Add milk to make smooth/soft dough.
6.At this point Preheat the oven to 180 degree C.I use Microwave with Convection Mode.
 I heated for 10 min.
7.Make lemon sized round balls and flatten them with your palms to shape the cookies.
8.Dip the top side of the cookies into the coconut and place them on a baking tray spacing about 1 inch apart
9.Bake the cookies till cookies turn slightly brown in the preheated oven for 15-20 minutes at 180 degree C. It took me around 25 minutes. If you want crispier cookies, bake for 5 more min.
10.They will be soft when taken out, but will become firm once they cool.
11.Let them cool down for 10 minutes.
12.Store in an airtight container. When Fresh coconut is used, store in the refrigerator.

Enjoy :)
